Our food
What’s in our food, and why
Everything we serve is made from scratch in our own kitchens: Indian pancakes from rice and lentils fermented overnight, curries slow-cooked in small batches with spices we grind ourselves, and nothing ultra-processed. Here’s what goes into every dish, the story behind it and, for our curries, the numbers.

How we cook
Three things that make it ours
Fermented, the old way
Our pancake batter is rice, urad and chana lentils and a few fenugreek seeds: soaked, stone-ground and left to ferment for 12 to 20 hours. No raising agents, no shortcuts. A pancake on its own (before fillings and chutneys) is about 332 kcal with 11 g of protein.
Spices we grind ourselves
We toast and grind whole spices in our own kitchen. Some blends are ours alone, like the Bharwa masala of peanuts, sesame, coconut and twelve spices in our Aaloo Baingan.
Like family, not a factory
Big chains make every batch exactly the same, in a factory, to a fixed process. We cook the way a family does: the same recipes, adjusted a little with the seasons and with what’s best at the market that week. The taste and the care stay the same.
What we leave out: emulsifiers, stabilisers, artificial colours and flavourings, and added sugar in our curries.

The numbers
How we work out our figures
We weigh every ingredient in each batch and work out the figures from standard food data (UK and international food tables), with the help of AI tools. They are our best estimates, not laboratory results. Because we cook in small batches and adjust with the seasons, each batch can vary a little. If a change ever affects allergens, the label and this page change too.
Questions
Good to know
Are your Indian pancakes gluten-free?
Our pancake batter is just rice, lentils and fenugreek seeds, so there’s no gluten in it. Our kitchen also handles gluten (for samosas and cookies), so if you have coeliac disease please read our gluten-free guide and tell us when you order.
How much protein is in your curries?
From about 8 g to 45 g in a 650 g box, depending on the curry. Our spinach tadka dal has about 45 g and our yellow moong dal about 42 g. Each curry’s page shows its full figures.
Do you use ultra-processed ingredients?
No. We cook from scratch with whole ingredients: lentils, vegetables, spices we grind ourselves and a little oil. No emulsifiers, stabilisers, artificial colours or flavourings, and no added sugar in our curries.
Why do your figures say “best estimates”?
Because they are. We weigh every ingredient in a batch and work the figures out from standard food data, with the help of AI tools. We cook in small batches and adjust a little with the seasons, so each batch can vary slightly.
Can I eat vegan at Dosa Chaska?
Yes. Everything we serve is vegetarian, most pancakes can be made vegan, every chat bowl is vegan or can be made vegan, and most of our curries are vegan. Look for the Vegan badges, or read our vegetarian and vegan guide.
Where can I buy your curries?
